South Georgia "Caviar"

2 (15 oz.) cans of black-eyed peas, drained
1 (15 oz.) can whole kernel corn, drained
1 (10 oz.) can diced tomatoes and green chilies (recommend Ro-Tel)
2 cups chopped sweet red peppers ( I use 1 red and 1 yellow)
1/2 cup chopped fresh jalapeno peppers (you can use canned peppers)
1 (8 oz.) bottle Italian dressing
1 (4 oz.) jar chopped pimentos, drained.
 
In large bowl, combine all of the ingredients and stir gently to combine.  Refrigerate mixture overnight.  Serve with Frito corn scoops.
